PB Banana Protein Muffins



So, without going into too much detail,
I'm currently going through some health stuff.

Sometimes I don't feel like eating because of it,
and I am sick of eating carbs.

Thank goodness for peanut butter protein muffins!

Stuck pretty close to the recipe,
except the honey didn't want to come out of the container,
and I am not a big honey fan either.
Probably used 1/8 cup honey, if that.

Also used chocolate chunks instead of mini chocolate chips.
(It was in the pantry)

The muffins did not need any more honey!
They stayed moist until they were gone.
Satisfying, almost indulgent,
but without the guilt.

Did I mention they are flourless? :)

Strawberry Poppyseed Chicken Salad


It's almost fall! The most glorious season of the year!
But it's still hot....like in the mid 80 degrees hot.
I wish it was sweaters & cider time,
but alas it is not.

Wanted to change it up for work lunches,
plus I have been eating too much pasta.
Desperately seeking less carbs.

This strawberry poppyseed chicken salad looked amazing!
Pecas, greek yogurt, apple cider vinegar...it had to be a winner.

Bleck.

Couldn't even finish the entire batch.
Bland central.
Did it really make that big of a difference that my pecans were not toasted?

Perhaps with tweaking this can be as delicious as it sounds.
But that's not my job. ;)

Poppy Seed Chicken & Grape Pasta Salad


Alright, now on to better recipes!

Due to health/medical reasons, I currently need to eat bland-ish things for a while.
Chicken and pastas are safe.
Plus pasta salads were made for summer!

A couple weeks ago, I made this poppy seed chicken and grape pasta salad.
It did not disappoint!

So delicious, and it kept for quite some time in the refrigerator.
A great recipe to eat for lunch for a week or so...
I did not get sick of eating it every day at work.

Looking forward to making this again!

Garlic Herb Dip


September! How I long to put fall decorations out...but it is not officially fall, right?

In food related news, made this garlic herb dip to accompany veggies as a low carb snack at work.
Hmm, probably will never make it again.

Maybe it was most of the herbs I used were dried instead of fresh.
I bought chives for another recipe, so that was the only fresh herb used.

It grosses me out, frankly.

Need a dip?
Make the buffalo chicken dip I have previously made.
